Crust
1/2 cup butter
1 cup brown sugar
1/2 tsp salt
1/2 tsp vanilla
3/4 cup flour
1/2 tsp baking soda
1 egg
2 cup oatmeal
Filling
1 cup chocolate chips
1 tsp vanilla
1 Tbsp butter
1/4 tsp salt
1 can sweetened condensed milk
Preheat oven to 350 degrees. For the crust, cream together butter, salt, brown sugar and vanilla. Add egg, flour, and baking soda. Add oatmeal and mix well. Set aside 1 cup of dough and press the remaining dough into the bottom of a 9 by 13 pan.
Combine and melt all filling ingedients in a small pot over low heat. Spread mixture over dough. Sprinkle the 1 cup of leftover dough over the top. Bake for 25 minutes.

1 1/2 tsp salt
1 Tbsp nutmeg
1 1/3 tsp cinnamon
Wet
1 cup vegetable oil
1 can pumpkin
2/3 cup water
Preheat oven to 350 degrees. Beat eggs well. Add all dry ingredients other than chocolate chips. Add the wet ingredients. Gently fold in chocolate chips.
This recipe can be made into bread or muffins. 2 large bread pans will require at least an hour. Depending on your oven it may need longer - the middle can be gooey. Regular muffins will take 40 minutes and mini muffins will take 20 minutes - these don't end up gooey.

Preheat oven to 250 degrees. Cream together butter, sugar, and brown sugar. Add vanilla and eggs. Add flour, baking cocoa, salt, and baking soda. Add just enough milk to mix easily. Add any desired chips. Bake for 8 to 10 minutes.
My go to flavor for this recipe is peanut butter chips. Vanilla and/or chocolate is also a classic. Mint works really well, too. My written recipe doesn't actually list adding the chips at all and I haven't made these recently. Honestly, I think I dump the whole bag in!
